What does prune powder do?
Prunes powder is a powdered product made from Prunus domestica through washing, pulping, concentration, and drying, preserving the natural flavor, nutrients, and functional active substances of prunes. Its core characteristics stem from the inherent "high fiber, high antioxidant, and natural laxative" properties of prunes, as well as the retention of components and optimization of form during processing.
Prunes powder are rich in sorbitol (6-14%), dietary fiber (7-10g total fiber/100g, including soluble fiber like pectin and insoluble fiber like peel fiber), antioxidants, vitamins, and minerals.
High-quality prune powder, especially freeze-dried products, retains over 80% of the dietary fiber, over 70% of the antioxidants, and the natural flavor of the raw material. Spray-dried products focus on retaining water-soluble components (such as fructose and organic acids).
Prunes powder is a light purple to dark brown powder with the characteristic sweet and sour aroma of prunes and no noticeable astringency.
Freeze-dried fruit powder has good solubility and leaves almost no residue, while spray-dried fruit powder is slightly sticky and has moderate hygroscopicity. The retention rate of active ingredients (such as anthocyanins) is >90%, but high temperatures (>60℃) or strong light may cause some antioxidants to degrade.
